The TDS 1.0 automated chicken thigh deboning machine is designed to produce thigh fillets from chilled raw materials (thigh without sacrum with skin or without skin) without the use of pneumatic or hydraulic preparation and excluding vertical load on the femur, which ensures the production of high quality fillets, without mechanical damage to the meat and bone and without undesirable hydration of the final product. The latest technology for obtaining thigh fillets is based on the separation of meat from the femur using the mechanism of double scraping and cutting of tendons in the knee joint using a ring knife (2 of them are included, with a diameter of 26 mm and 28 mm, depending on the weight of the hip). The machine has 26 working units, which provides a productivity of 3600 thighs/hour (this means that with an incoming carcass weight of 1650 g. and a thigh fillet output of 11.0 – 12.0%, you can get 2700 – 2800 kg of fillets for an 8-hour shift. If desired, the number of working nodes can be doubled (this does not require reconstruction or reconfiguration of the machine), which immediately provides a 2-fold increase in productivity (7200 hips/hour).
All parameters of the machine (speed, diameter of ring knives, rigidity of horizontal knives, height of the skin-earth node, intensity of water spray) are regulated in wide ranges. When setting the machine to a certain hip weight, the permissible range of vibrations of incoming raw materials that does not affect the output of the final product is ± 20 %!!!.
The number of workers – 2 people for hanging, 3-4 for sorting and dozhilovka. The percentage of products that need to be processed at the output (removal of small cartilage, pieces of skin) does not exceed 7% (real figures, verified after many months of work).
The average yield of fillets from the thigh with skin without the sacrum is 68-72%, from the carcass 11-12%.
The technical condition of the car is perfect. In 2018, the manufacturer's specialists, led by the developer, upgraded the machine to the latest version. Together with the machine are sold 2 sets of ring knives (26 and 28 mm), a sharpening machine for straightening ring knives.
