Jacket kettles utilise indirect heat via a vacuum of distilled water.
The vacuum causes the water to heat up to 122 degrees Celsius
for rapid boiling of stocks, soups, sauces and preserves.

with powerful 3 phase elements affording you excellent cooking control.
Cold water can added to the kettle via the goose neck tap on the machine.
